]]>Sometimes I have an idea but I have no clue how to actually bring it together or how it will work. This Braised Garlic and Herb Cabbage with a Pea Mash and Sausages is one of those dishes that seemed to come together as I was cooking it.
The Viking loves cabbage and I love The Viking so I try and use cabbage as often as I can. I’m a big believer in not messing around with veg too much. Cabbage has a unique, delicious taste if you cook it nicely and so some simple herbs and garlic is all you need to enhance that taste.
Braised like this in chunky wedges ensures you keep the texture too and the little griddle lines add a wonderful charred quality that elevates these to more than just a side.
I’m serving them with roasted sausages and a cheats pea and herb mash that is out of this world!
Start with your favourite sausages – get them into a roasting tin and into the oven. I usually roast my sausages at 180C / 380F for about 30 mins.
For the braised cabbage, place the butter into a large bowl and crush in the garlic and add the chopped herbs. Stir together and set aside.
Chop the cabbage into wedges – the trick it to leave the stem in place as this will hold the cabbage together. Halve the cabbage through the root, then divide each half into 4 wedges. Slather both sides of each wedge in the garlic and herb butter.
Place a griddle pan on a high heat and once the pan is hot lay the cabbage wedges into it. You may want to do this in batches. Turn them over after about 6 mins or until they have golden brown tan lines. Once both sides are done, pour in enough stock to come 1/3rd of the way up the cabbages. Pop the lid on the pan and let them sweat on a medium heat for 5 mins. Remove them from the heat and set aside.
To make the pea mash, boil the peas for a few mins until cooked, then drain them well and add the cream cheese and mustard. Whizz up to a rough puree with a stick blender. To build the mash, I use a pre-made mash (the supermarkets make all kinds of fancy pre-made mashed potatoes that really can’t be beaten)
Smooth some mash onto a plate and then smooth a spoonful of the pea puree across the top, making a sort of ripple effect. Then serve the sausages alongside the wonderful braised cabbage.

I was recently sent a new air fryer from the lovely people at Lakeland. Brand new air fryer, brand new recipe and what I LOVE about the Lakeland Adjustable Large Drawer Air Fryer is its massive 9L capacity which means I can literally roast a whole bird in there.
Now I’m spatchcocking this chicken which sounds gruesome but it’s actually really easy and I’ve made the most incredible garlic, rosemary and lemon butter that I’m slathering under the chicken skin and all over the bird.
40 minutes in the air fryer and you have the most golden, flavourful, crispy-skinned roast chicken you will ever eat!
Prep: 10 mins
Cooking time: 40 minutes
Difficulty: easy
Serves: 4
Ingredients:
Set the air fryer to 200C and pre-heat it for 5 mins.
Chop the herbs and garlic until fine and add them to a bowl along with the butter and lemon juice. Stir well. Set aside.
Spatchcock the chicken. This is very easy. Flip the bird over onto its breast and, using a pair of sharp scissors, cut either side of the back bone and remove it. Flip the chicken back over and place the flat of your hand onto the breastbone and push down until you hear it crack.
Slather the chicken with the herb butter ensuring you get under the skin and all over. Season the bird with salt and pepper.
Chop the potatoes and place them into the bottom of the air fryer, then lay the chicken on top and roast for 40 minutes. After 15 minutes, carefully flip the bird over. After 25 minutes flip it back over so it’s breast up, for the remaining 15 minutes.
Allow the chicken to rest for 5-10 mins before serving. Don’t forget to spoon the juices from the bottom of the air fryer pan all over the bird to keep it juicy.

]]>Salt and Pepper Cauliflower Love Bites
These little love bites are the perfectly crispy way to add a little tang to your Valentine’s Day and show your loved one just how sweet, salt and peppery you think they are! Great as a starter for two or even as a canape idea if you’re throwing a party for everyone you love. They’re also a brilliantly versatile dish that can be made in the air fryer or the oven.
You’ll need plenty of freshly ground salt and pepper in these cauliflower love bites so the gorgeous, deep gloss red London Mills from Cole & Mason would be perfect.
This recipe is inspired by the amazing Jessica in the Kitchen
Prep: 10 mins
Cooking time: 30 minutes
Difficulty: easy
Serves: 2 – 4
Ingredients:
Salt and pepper glaze
Preheat your air fryer to 180C (if using a regular oven then 200C fan / 450F)
If using a regular oven, prepare a baking sheet with parchment paper.
Chop the cauliflower into small bite size pieces.
In a large bowl, whisk the flour, milk, salt and pepper and lemon zest to make a batter.
In a second bowl, place the breadcrumbs.
Toss the cauliflower in the batter mixture using a spatula or spoon to coat them all. Transfer them to the breadcrumbs and coat completely, then place them into your air fryer or onto the baking sheet.
Bake for 15 minutes in the air fryer or 25 mins in the oven until gloriously golden and crispy.
Meanwhile, make the glaze by placing all the ingredients into a pan and gently heating whilst you whisk them together.
Once the cauliflower love bites come out of the air fryer toss them in the sauce, then place them back into the air fryer for a final 5 minutes.
Garnish them with chopped chives, freshly ground pepper and lemon zest and enjoy!
Tip:
Make these ahead of time and then place them back into the air fryer for 5 mins on 180C to crisp up!
