organic knobbly apple and cider-washed goats cheese traybake
this is a real ‘on the run’ recipe for when you need something fast and sweet to feed the troupes, I usually bake it in a regular cake tin but being down in London for the past couple of weeks means that i’m still making do with baking cakes in the grill pan!… anyway, who doesn’t love a traybake… plus it’s packed with some gorgeous organic apples I was sent as part of the Organic. Naturally Different. campaign… so I knew it would taste fabulous plus I’d also been sent some incredible cheeses from The Handpicked Foodstore company and included in this was a divine Little Wallop cider-washed goats cheese made by Alex James that I knew would perfectly compliment the apples… it’s a bit of an unusual combination but one that simply works…
450g apples – cored and finely diced
60g strong goats cheese
2 large eggs
250g self-raising flour
a little milk
in a large bowl, cream the butter and sugar until light and fluffy then add one egg and beat in, then sieve in half the flour and beat in again.
beat in the last egg and the remaining flour then stir in the apples and crumble in the goats cheese. Add a little milk to slacken but it will still be a very tightly packed batter and this is how it should be.
spoon into a pre-lined and greased baking tray and bake for 30 mins on 180C until golden and a skewer inserted comes out clean
