simply eggcellent #2 – chocolate

… we may have the bunny, the lamb and the chick but we all know that the egg is the ultimate symbol of Easter… the joy of renewal of life and the advent of Spring is celebrated in festivals all over the globe from Passover to Holi and for many the symbolic icon of the egg sits at the centre of these celebrations… I adore chocolate Easter eggs.  It always feels like a special time of the year and even thought the chocolate we eat all year round is the same chocolate used for Easter eggs there’s something a little more magical about it.  It could just be good memories from childhood and the fact that as well as Spring and lighter longer days it also mean holidays and time off from school!  My brother and I were always quite competitive though and we used to inhale our Easter eggs the moment we got them.  I could never understand friends who, weeks later used to boast about how many chocolate eggs they still had left… quite frankly I found it unhealthy…

… this month to celebrate Easter and this fun month that reminds many of us about being a kid I’d like the theme for the Simply Eggcellent link-up to be chocolate… of course it doesn’t just have to be Easter related and in fact Easter is very early this month so it would be a very quiet rest of the month… so i’ve gone for a more well-rounded chocolate theme and there’s so many recipes out there where eggs and chocolate are beautiful bedfellows from the glorious chocolate orange roulade … to the humble but no less fabulous chocolate custard…

    I was one of the Easter egg hoarders rather than scoffers. I hardly ever got to have sweets and chocolate, so when I did I needed to make it last as long as possible. I expect I might manage to find something chocolatey with eggs in to submit this month 😉

    I totally agree…. eggs are the best. There is something about the thinness of the chocolate and how it melts in the mouth which makes Easter eggs that much more special.
    Mine always disappeared as if I was a magician as a child….. my daughter on the other hand had to clear out a couple from last year yesterday (in prep for Sunday!)…….. I think she just likes the kudos of 'having them'. They promptly went into one of Mummy's cakes!! Looks like I still have the magic ability to make those eggs disappear……..

    I'm a chocolate egg scoffer, while my 3 year old son is good as gold and wants to put all of his chocolate eggs and bunnies in his treat cupboard. We've still got chocolate sitting in there from Christmas! I've linked up my Easter pavlova made with caramel and chocolate mini eggs, which also uses the gorgeous organic free range eggs I purchased straight from the farm. Glad I found your linky.

Vegan roast vegetable gravy. The best gravy I’ve Vegan roast vegetable gravy. The best gravy I’ve ever made, easily on par with the roast chicken-wing gravy I made at Christmas. Served here with @quorn_uk ‘meatballs’ and two types of mash - regular potato and swede & carrot.

Cake! - is there such thing as a ‘healthy’ cak Cake! - is there such thing as a ‘healthy’ cake?

This fat-free orange and lemon cake is actually an adaptation of the infamous Clementine Cake by @nigellalawson . It’s one of my absolute favourite ‘go-to’ cakes.  If truth be told I usually make it at Christmas because its rich almond nuttiness and intense clementine fruitiness is perfect for the holiday season but looking back over the years I realise I haven’t actually made it for about 8 years! So now seems the perfect time to resurrect an old favourite.  It’s also a great cake to make if you have an abundance of citrus fruit left over from last year.  I always seem to have a few stragglers left in the bowl that really need eating.

vegetable stew with a creamy yoghurt sauce & chedd vegetable stew with a creamy yoghurt sauce & cheddar dumplings with @quorn_uk pieces and @fage_uk yoghurt

The challenge with making food or diet-related New Years resolutions is that it tends to be pretty damn cold this time of year and all we really want to eat is warming soups and stews which often tend to be quite naughty.  With this stew I’ve tried to cut down the fat but still make it unctuous and satisfying although the dumplings are a total cop-out but I’m thinking that this is a ‘one bowl meal’ and I’m not saving it with any other carbs so I’m letting myself off here!
